How do you pull your shots? Ristretto? Double Ristertto? Long, short? or "normal"?

I generally pull my shot regular, but if I do vary from that I will usually go ristretto.

If I am pulling them for an Americano I will either pull a double basket to about 2.5 oz (so just a hair long) and if I am pulling for straight espresso I will a double shot basket just shy of 2 oz.

i usually pull a regular double shot straight up or as a con panna.

If I'm feeling girly, i'll go for a vanilla soy latte (which is rare).

I have always been huge on the really dramatic, goopy double ristrettos.

 

However, you do end up with some really muddled flavors in some cases. I usually shoot for just about 2oz in 26-30 seconds as a standard. 

At the end of the day though, it really depends on the coffee, roast level, and freshness!

do you find that the coffees with higher acidity and fruit, velvety do better as double risterttos?

I normally just do a normal length double, either as a con panna (but just very little whip) and some carmel in it, or if i just need to down 2 shots real quick, and want something sweet, i'll do a tear drop with cold vanilla half and half, and then break the double shot on top so it's hot and bitter on top and cool and sweet on the bottom.

SO African Beans (typically Ethiopian), Syrupy double ristrettos.

Like the beans to be "well roasted", typically FC+ to mute the acidity and brightness…
