What is a Clover?

A few months back when I first heard about Clover, I was super excited. This machine is unique, unlike any other. It creates a cup of coffee that gives you the fullest flavor possible, somewhat like a french press but without leaving any sediment in your cup. It’s 70 micron filter extracts almost all liquid from the grounds thus pulling the best parts of the flavor from the bean while leaving all the extracted grinds behind. Much to my dismay there are only 250 machines on the market. Well that is until a few months ago when Starbucks announced that it was purchasing Clover. I was both excited and saddened when I heard this news. Excited because this will expand the reach of this amazing feat of engineering and saddened because I would primarily only be able to try Starbucks Coffee’s in this modern machine.

What Does the Future Hold?

The most amazing thing, to me, about the Clover is that it involves the barista in the art of making a cup of coffee again. (In the last few decades we have lost this inclusion.) This is amazing for a number of reasons. It forces the barista to connect with what makes each cup unique, flavorful, & good. How the flavor profiles are affected by simple changes in blend, temperature, time, & even stirring technique. In turn it will create a dialogue about the coffee between the barista and the customer! How cool.

Hopefully, sometime soon, another company will create a similar machine so that we cannot only enjoy a “Clover” cup of Starbucks Blends but also some amazing single origin coffees & unique blends from around the world at our local Family owned shop.

    I was at a coffee shop yesterday in Pasadena (Tazza Bianca) that has one of the 250. I have to say — that was one good cup of coffee! Now I get what the buzz is about.

    What a cool thing! I adore my french press, but hate when I get some sediment in my cup…I wonder how many stores will actually be using this?

    How does the Clover produce press-style coffee so quickly? I’m thinking the extraction process should take at least 3 or so minutes. What is going on inside this machine? And the finished product seems remarkably clear . . . unlike the murkiness of pressed coffee.

    It might be a great machine but a simple, non electric french press can’t be beat! I’m sure this single cup machine isn’t cheap either! Save your money and pay off your bills instead!

    I would imagine that this will produce one clean cup of coffee. I wonder how long before a home version of this will be available. Not that I will be standing in line to buy one of these, but I may well stand in line to taste a cup or two when they come to a Starbucks near me.

    I was a barista at Starbucks for 2 years and up until a few weeks ago. When I first heard about the Clover machine, I thought, wow! this is great! we can basically brew a “personalized” cup of coffee for each person. but the machines at the time were only being put in a few stores, and mine wasn’t one of them :(

    What you said about barista’s connecting with the coffee and the customers is classic Starbucks. This is something that the company has always gone to great efforts to instill in their employees.

    I really hope that I get a chance to try coffee brewed with the Clover machine. I think i would like to try a nice Sumatra. mmmmmmm

    Intelligentsia Coffee in Chicago embarked on serving coffee made on Clovers to make “more individualized cups of coffee.” I’m not sure if they ever went back to drip coffee.

    BTW, Clover is now part of SBUX.

    I also left out of the last comment that a Clover retails for about $10k (in 2008), and SBUX purchased Clover in 2008.
